#bakedinmud is how we celebrate the creativity, cooking and styling of Mud Australia porcelain owners.

How to enter?

  1. Snap your culinary creation in Mud porcelain.
  2. Share your image via static post or story (static posts get bonus points!) and make sure you hashtag your image #bakedinmud and follow @mudaustralia on Instagram, private accounts please DM your image to our @mudaustralia account between 7 June – 5 July 2021.
  3. We’ll share your recipes and images on our social media channels as we receive them!

Baked quinces & a recipe for Monday.⁣⁣
2 tired kids⁣⁣
One messy house⁣⁣
2 large quinces⁣⁣
Juice of 3 oranges⁣⁣
3 tablespoons honey ⁣⁣
1 cinnamon stick⁣⁣
Toasted macadamia nuts, extra honey, labne or yoghurt, a Thomas the Tank Engine movie, and shortbread biscuits, to serve. ⁣⁣
Preheat oven to 150 degrees C (ff). Put Thomas dvd on and place kids in front of telly. Chop quinces in half and then each half into thirds. Peel and cut out cores if you can be bothered, otherwise chuck them in as is and scoop out cores when cooked. ⁣⁣
Place quince pieces, orange juice, honey and cinnamon stick in an oven-proof baking dish and toss to combine. Nestle quince pieces into one layer and cover baking dish with a layer of baking paper and then foil. ⁣⁣
Place baking dish in preheated oven and cook for 3 1/2 - 4 hrs, basting fruit every now and then. Check on kids and make a cup of tea before sneaking off to read a magazine.⁣⁣
When quinces are done (they should be dark crimson and deliciously soft), remove from oven and allow to cool slightly before serving with labne, extra honey, roughly chopped macadamia nuts and crumbled shortbread. Side of Thomas on repeat entirely optional. x ⁣⁣

For Thanksgiving, I baked them in a beautiful shallow pink ceramic serving bowl instead of in round baking pans. (Wasn’t sure that would work but any oven-safe serveware would be perfect. test bake for Christmas in July, ginger puffs with eggnog custard. If you’re familiar with the aussie classic the ginger fluff, picture that in miniature form, with a vanilla, nutmeg and cognac custard, and softly whipped cream.

An ordinary evening, late autumn. Afternoons are rainy, Christmas lights still far away. The yellow leaves pile up on the ground under the trees, mingling with the relentless rain, a mushy carpet for busy steps. Evenings like these require a comforting savoury butternut squash pie: I want it ready, so that I just need to reheat it in the oven, enough to crisp the breadcrumbs and melt the mozzarella, making it soft, buttery, a hug.
