The Secret Kitchen’s Savoury Apple Pie with Sage and Golden Crust

Salted Maple Drizzle
1/3 cup maple syrup
½ tsp sea salt
¼ cup fresh sage leaves, chopped

Apple and Cheddar Filling
1 sheet of puff pastry
2 tbs vegan butter
4 apples, peeled, cored and diced
1 yellow onion, diced
½ tsp ground ginger
¼ tsp ground cinnamon
1/4 cup fresh sage leaves, divided
½ tsp salt
1 cup Cheddar Cheese or hard vegan cheese, grated

Salted Maple Drizzle
Place maple syrup in a small pan. Heat for 20 seconds until warm to touch. Add sea salt and stir. Set aside.

Apple & Cheddar Filling
Remove your box of puff pastry from the freezer and set aside to defrost while you make the filling.
Line your Mud Pie Dish with baking paper. Set aside.
Melt butter in a medium pan. Add apples, onions, ginger, cinnamon salt and 1 tbsp fresh sage. Cook, stirring occasionally, until the apples and onions are softened and slightly caramelized, about 10-15 minutes.
Add 1/2 cup of cheddar (or vegan) cheese and stir until melted. Remove from heat and set aside.
Separate the sheets of puff pastry. Use one sheet and place onto the prepared pie dish
Fill the pie with apple and cheddar, evenly dispersing. Top up with remaining 1/2 cup of cheese. Bake for 15 minutes or until pastry is golden and cheese is bubbly.
While puff pastry is still hot, drizzle with salted maple and sprinkle with remaining sage.
Serve warm.
