Serves 2
1 head of radicchio
8 good quality anchovy fillets
2 boiled eggs
50g sourdough toast (mix sourdough with tablespoon of olive oil, pinch of salt and place in the oven at 170 degrees for 10 to 12 mins).
50g good quality parmesan cheese (grated or shaved)
Buttermilk Dressing
200ml buttermilk
100g mayonnaise
1 tsp squeeze of lemon juice
1 tsp Dijon mustard
1 tsp onion powder
½ tsp garlic powder
1 tbs chopped chives
1 tbs chopped parsley
1 tsp chopped dill
Peel and wash the radicchio.
Arrange onto a plate.
Mix the buttermilk and mayonnaise together for the dressing and add the rest of the ingredients together.
Drizzle a generous amount of buttermilk dressing through the radicchio.
Scatter on top, chopped boiled eggs, anchovy fillets, toast and cover with parmesan cheese.
