1kg fruit: nectarine, peach, apple, plum
1 tsp vanilla essence
2 cups flour (all-purpose)
150g butter (chopped)
2 tsp baking powder
3/4 cup sugar
1/2 cup milk
1/4 cup raw sugar
Chop the fruit into bite-size pieces. You can use any mixture of fruit, but I do like to use a bit of apple as it holds its shape. Place the fruit in a pot with the butter, sugar and vanilla essence and heat on low for about 10 minutes then pour the fruit mixture into a baking dish.
Heat the oven to 170°C with a fan.
In a bowl, place the flour and butter. Rub the butter into the flour with your fingertips until it resembles breadcrumbs then add the baking powder, sugar, salt and mix until combined with a wooden spoon.
In a small bowl, whisk the egg and milk with a fork until combined then add to the bowl with the flour and bring the mixture together with a wooden spoon. With a large spoon dollop spoonfuls of dough on top of the fruit. You’ll want to leave some space between each spoonful so the fruit can bubble through it.
Sprinkle the raw sugar on top then bake in the oven for about 40 mins or until golden on top.
Serve warm with cream or ice cream.
